Spanakopita

Ingredients:

Serves 6

1 kg adult spinach 

Salt

1 small leek, finely chopped

1 red onion, finely chopped

1 tbsp butter

5 spring onions, finely chopped

275g good quality feta 

A medium-sized bunch of dill, chopped. (about 25g)

2 eggs 

nutmeg 

Zest of 1 lemon

3 tbsp butter, melted 

1 tbsp olive oil

Method 

 

  1. Preheat your oven to 200℃

  2. Start by roughly chopping the spinach. Salt carefully and scrunch the salt into the spinach. Leave to sit for at least 15 minutes. 

  3. Gently fry the red onion and leek in 1 tbsp of butter and oil until they're soft. Transfer to a large bowl. Mix with the spring onion, feta, dill, eggs, nutmeg and lemon zest. 

  4. Line your tin with filo pastry as shown in the video. Place the spinach mix into the lined tray and cover, brushing each layer with the 3 tbsp of melted butter and  1 tbsp olive oil as you go.

  5. Bake in the oven for about an hour or until lovely and golden on top. Serve warm.
